Egg White & Spinach Omelet With Chicken














My Recommendations: 

This is a great way to start or end the day. This quick and easy meal is a great protein packed low carbohydrate meal that can be an asset to your fitness and nutritional regimen.

Ingredients:

3/4 cup liquid egg whites
1/2 cup steamed spinach (drained)
1 oz. fat free cheddar cheese
2 oz. grilled boneless-skinless chicken breast
1/4 cup chopped onions and peppers
1/8 tsp white pepper
Pinch salt

Directions:

Heat large skillet over medium-low heat. Spray Skillet with non-stick cooking spray (2-3 second spray). Add salt and white pepper to egg whites and mix. Pour the seasoned egg whites into the heated skillet and allow to cook on one side. Add 1/2 cup spinach along with 1/4 cup onion and pepper mix. Allow egg whites to form into a solid mold (3-4 minutes) before attempting to flip. After the eggs form flip the omelet over and allow to other side to cook 2-3 minutes. Add cheese and chopped chicken breast along the center line of the omelet and fold in half. Plate the omelet and garnish with 2 thin slices of fresh roma tomatoes. Serves 1.

Why do you prefer white pepper over black pepper? I never thought about draining my spinach, which is necessary to keep the omelet from being runny. Thanks

@ Jocelyn. I'm not partial to white or black pepper overall however, I like white pepper for foods that are lighter in color and black pepper for foods that are darker. Also, it would be a good idea to drain the spinach if you don't want to end up with a mess.
